Cavallotto – The Quiet Giants of Barolo
Perched high above the village of Castiglione Falletto, Cavallotto is one of Barolo’s most revered traditionalists, a family-run estate whose roots run deep into the limestone and marl of the legendary Bricco Boschis cru. Established in 1948, Cavallotto was among the very first producers in Barolo to estate-bottle their wines, setting a standard of quality, independence, and authenticity that has defined them ever since.
The history of Cavallotto is intimately tied to Bricco Boschis, the family's historic monopole vineyard that spans nearly the entire hillside beneath their cellar. This single site, with its varying exposures and altitudes, forms the backbone of Cavallotto’s identity and offers a natural laboratory for producing Barolos of remarkable structure, ageability, and complexity. Over time, the family has also expanded into parts of the adjacent Vignolo cru, adding a further dimension of depth to their portfolio.
Since the beginning, Cavallotto has stayed fiercely loyal to traditional Barolo methods: organic farming long before it became a trend, wild fermentations, long macerations, and extended aging in large Slavonian oak casks. Today, the estate is run by the fifth generation of the Cavallotto family: Alfio, Giuseppe, and Laura Cavallotto, who continue the legacy with the same quiet dedication. Their wines are famously structured and slow to reveal themselves in youth, but with time, they evolve into some of the most profound and elegant expressions of Barolo.
Cavallotto's Barolo Bricco Boschis is the estate’s signature wine: layered, powerful, and endlessly age-worthy. From select parcels within that cru, they also produce Barolo Riserva San Giuseppe, a benchmark for traditionally made Barolo. The Barolo Vignolo Riserva offers a more velvety, nuanced take, while their Barbera and Dolcetto bottlings show the same rigor and purity as their flagship wines.
